¼ cup GRAPESEED OIL

½ tsp FENNEL SEEDS

½ tsp 5 PEPPERCORN MIX

½ tsp CURRY POWDER

1 tsp BROWN SUGAR

PINCH SEA SALT

PINCH CAYENNE PEPPER

¼ tsp ALLSPICE

¼ tsp GARLIC POWDER

METHOD

PLACE DRY SPICES ON A BAKING SHEET

TOAST UNDER BROILER FOR APPROXIMATELY ONE MINUTE

ALLOW TO COOL

GRIND IN A SPICE GRINDER

COAT TOP OF SALMON WITH GROUND SPICE MIXTURE

HEAT SKILLET WITH GRAPESEED OIL ADD SALMON SPICE SIDE DOWN

SEAR FOR APPROXIMATELY 1 MINUTE

TURN OVER AND COOK FOR 1 MORE MINUTE

REMOVE FROM PAN AND KEEP WARM 

LOBSTER MASHED POTATOES

4 oz DICED LOBSTER MEAT

4 oz LOBSTER OIL (BOIL THEN SIMMER

LOBSTER SHELLS IN GRAPESEED OIL)

COOL AND STRAIN 1 lb PEELED YUKON GOLD

POTATOES

3 oz CREAM

3 oz BUTTER

LEMON SALT

METHOD

BOIL POTATOES IN SALTED WATER UNTIL SOFT

STRAIN AND PRESS THROUGH A POTATO RICER

ADD CREAM AND 2/3 OF BUTTER

SEASON WITH SALT

PLACE WARM LOBSTER MEAT IN REMAINING BUTTER

COMBINE WITH MASHED POTATOES

FOLD IN 2 oz OF LOBSTER OIL

PLACE ON TO WARM PLATE

TOP WITH SALMON

DRIZZLE WITH REMAINING LOBSTER OIL
