Key Lime Cheese Cake

Serves 4

INGREDIENTS

2# cream cheese

18 oz Sugar

7 oz key lime concentrate

8 oz sour cream

1 tsp vanilla

¼ c 1T AP flour

½ tsp salt

6 ea eggs

METHOD

Beat cream cheese and sugar.

Beat in Key lime concentrate, sour cream, and vanilla, scrape the bowl.

Mix in flour, salt and then the eggs.

Bake in a water bath at 275 degrees for about 1 hour until cheesecake jiggles as a solid mass with no ripples.

Cool down at room temperature before chilling.
