HEIRLOOM TOMATO AND BURRATA SALAD

SERVES 4

INGREDIENTS

Ingredients:

2 c. Baby Heirloom Tomatoes (blanched and peeled)

4 oz. Burrata Cheese

1 oz. Katz Extra Virgin Olive Oil

1 tsp Basil Oil

1 tsp Balsamic Syrup

Micro Basil

1 pinch chopped Parsley

Kosher Salt and Fresh Ground Pepper to taste

METHOD

For Basil Oil

Blanch and Chill 1 bunch Basil

Squeeze out excess water and put in a blender

Blend Basil while slowly adding 2 c. Extra Virgin Olive Oil

Strain through fine mesh strainer.

 

For Balsamic Syrup

Sachet w/ Basil, Garlic and Shallots

1 qt Dark Balsamic Vinegar

Add all ingredients into saucepan-reduce to syrup consistency

Remove sachet, strain through fine mesh and chill.

Toss Tomatoes w/ Olive Oil, Parsley, Salt and Pepper.

On a plate, arrange Burrata in center and surround w/ tomatoes.

Garnish w/ Basil Oil and Balsamic Syrup.
