DUNGENESS CRAB CAKES

INGREDIENTS

1 lb Dungeness crab meat

2 tbsp mayonnaise

2 tbsp Dijon mustard

1 whole egg

1 cup panko bread crumbs (or regular dried bread crumbs)

1 tsp Tabasco

Zest and juice of 2 lemons

1 red bell pepper, diced

2 tbsp chopped chives

Salt and pepper

METHOD

Squeeze all water out of the crab meat.

Combine with other ingredients (keep half of panko separated).

Season to taste.

Adjust wetness of mixture with panko or mustard/mayonnaise if necessary.

Form small patties an roll in remaining panko.

Sear till golden, finish in a hot oven.
